Sometimes I think about what my favourite form of dessert is. Is it cookies? I love cookies that are soft, chewy and full of vanilla and chocolate flavour. I love a good cake, but cake is so hard to perfect. So many people get the ratio of sweetness to bitter chocolate flavour wrong. Or the ratio of cake to icing. Or moistness to density ratio. I am very picky about cake, clearly.The only cakes I seem to like are the cakes I make myself. But who’s going to make cake just for themselves? I’ve gotten to the point where I need to watch what I eat because I’m not some young whippersnapper anymore who can eat whatever she wants and not worry about weight. Time and a slower metabolism is catching up with me! Not okay.
Then I think, is it donuts? I love yeast-raised donuts that are fried with a crispy outside with a soft and pillowy inside. You can flavour them so many different ways and they marry my love for chewy dough and flavoured glazes.
But you know what?
You’ve heard it before, and I’ll say it again. TARTS, man. Tarts. Crisp crust, creamy filling, and the option of topping with juicy fruits or coconut whipped cream. Pies, tarts, I’m there. Dig in with a fork and wash it down with a glass of almond milk (or soy milk if you’re allergic like me).
Avocado gives a luscious creaminess and body to this tart. Chocolate chips add, well, chocolate, but also help solidify the whole pie so when you cut a slice it keeps its shape.
